I love turkey .............. smoked, roasted, deep fried, sous vide, etc.
One year for "goodie day" at work, I smoked a turkey; deboned it; put it back together on a serving plate.
No one recognized the effort ....................... :endesacuerdo:

I did wonder about what temperature was required to kill Rabies (present in my area of NE Ohio), and variant Creutzfeldt-Jakob disease.
"vCJD" is believed to be caused by eating meat products contaminated with central nervous system tissue, such as brain and spinal cord.
I had heard some discussion / concern about this being a problem w/ wild animals also (e.g. deer, etc).
Most of the raccoon meat is along the back, near the spinal cord.
I tried checking w/ Ohio Dept of Natural Resources, USDA, CDC, etc, etc.;
Never got a satisfactory answer ......................... they didn't know !

By the end of checking, I had already eaten the raccoon. It was very good. I'm still here.
 
Smoked turkey
Did you smoke that turkey whole? It kinda looks like drummies and breast separate. I ask because I'm supposed to smoke a turkey tomorrow for the great family feast on Sunday, and I want as much surface area smoked as possible. TIA.
