Paperwork for sales staff,

When I worked in sales and did have access I did sign a 2 yr non-disclosure. A non-compete wouldn't fly because it unreasonably limits the person's ability to earn a living.
 
Non-disclosure agreements make more sense, and there have been cases where non-compete agreements have been rendered unenforceable (hairdresser leaves one salon to take job at another salon, first salon owner wanted to prevent her from working for anyone else within a sizable area); essentially, you're telling someone they can't practice their trade which is the same as saying they can't earn a living. You should be able to ask they respect your customer base and what they learn while doing their job for you.
 
It has to have a reasonable time frame in order for it to be legally binding. No more than a yr as any information they have would be out of date and have little relevance.
 
Do any of your who employ sales staff with access to sensitive data make them sign non compete clauses?
What do you consider sensitive? The guy you hire to drag brush for the summer has potential access to see some of your clients as well. So other than your hourly rate what do you worry about?
