I do like shepherd's pie !I've posted this before, usually make this once or twice a year, and usually in the colder months. Shepherd's Pie, using ground lamb.

Dressing / Stuffing
Zesty Pork Sausage
Red onion
Celery
Mushrooms
Cranberries
Corn bread crumbs
Bread cubes - dry, unseasoned
Olive oil
Black pepper, Thyme, Rosemary, Accent (MSG), Red pepper flakes
Par cook sausage & vegs in wok; add spices.
Mix all ingredients in wok.
Add chicken stock
Transfer to baking dish
Bake uncovered at 350°F for 30 min.
Bake uncovered at 450°F for 30 min.
Gravy - Made w/ Turkey + Lamb Ju; plus, Wondra Flour.
Lamb Loin Steak
Lamb – sous vide at 140°F for 24 hrs
Oysters – Fried
Breaded, smoked – briefly marinate in liquid smoke; then egg wash, panko
Fried – 350°F for 5 min.
French Fries – Twice Fried (275° for 10 min. / cool); (then 375° for 5 min.)
