People always said that my mother's hand writing was excellent. She could also type on a manual at 100 wpm ! ! !That is my lovely wife's beautiful hand. I used to tell people I married her for her handwriting.

Mozzarella sticks, jalapeño poppers, chicken tenders, battered mushrooms, and possibly green beans that’ll be kinda like french fries.

Red cabbage in avocado and olive oil with some carrots and smoked turkey, grilled thighs, and some mixed greens with boiled eggs and oil with vinaigrette


FYIChicken Croquettes
Rev: 211102 1555
1 c 250g Chicken – cooked, cubed, shredded
¼ onion 75 g Onion, red – small dice
1 60 g Celery stalk – small dice
¼ c 35 g Bread crumbs – fine
1 Egg – beaten
1 t Black pepper
1 t Poultry seasoning
½ t Accent (MSG)
Mix & rest for bread crumbs to absorb moisture.
Form into ~11 balls; ~1-1/2” diam.
Breading:
Coat w/ AP flour; rest ~ 30 min.
Egg wash
Panko bread crumbs - 6 pcs
Corn meal - 5 pcs
Fry:
350° F in Peanut oil; ~ 8 min.

Canned chicken does make a pretty good chicken salad, I’ve discovered that myself as well, but did not do a trial of brands like you did.FYI
I recently saw a Food Network Show where Canned Chicken was used to make a chicken salad sandwich.
I thought . . . . . that can’t be any good; it must be dried out chicken; no taste.
But since I’m lazy I decided to try some.
I bought several different brands at Walmart.
“Keystone, All Natural” chicken was pretty darn good; especially for no prep effort !
Thus, the above Chix Croquettes.

That sounds good. Around here, a chopped boiled egg and some garlic powder are common additions to chicken salad, never seen radish added though.I'm going to try Chix Salad w/ the left-over chix.
