Outstanding IPA. Best in show at Columbus Winter Beer Fest a few years back ( we also have a summer one.) Has won a lot of medals/awards, well worth a try if you find it.
 
I've had three different Chimays, Orval, and some Rochefort. All amazing but Chimay Blue may be my favorite.
I once got snowed in, then a ice storm dumped. about 10" of snow with a thick crust of ice over everything. All I had were a few bottles of Chimay, so I drank them. Once plastered I realized that my smokes were frozen inside my truck... Next thing I remember is that I woke up on my living room floor with a split eyebrow, busted lip, a few lumps on my head, and dried blood all over my face and shirt.
 
I know this is a beer thread, but this is how I roll... Been bottling up 20 gallons of hard home brew king apple cider. Each 5 gal jug has 1 quart of honey, and one pound of raw sugar. Needless to say at the solstice part the guests were drinking it out of double shot glasses. The cider yeast I used seemed to produce a much higher %, while the champagne yeast preserved more notes and is a little lighter, and smoother finish.
