2 T Butter
Sous Vide: 128°F for 24 hrs.
Brussel Sprouts
Cut in half length-wise.
Sauté in butter, flat side down to brown.
(If necessary to increase tenderness, add a small amount of water & cover to steam at the end of cooking.)
Potato - cubes
Pan fried in butter.

Like my mother, I keep a container of bacon grease in the refrigerator for frying.
By cooking the flat side of the sprouts, they suck up all the butter/grease between the leaves !
This small batch of sprouts sucked up ~ 2 T of butter !
Gotta say, just plain old pan seared scallops by themselves is better. I made a pretty good alfredo but it overpowered the seafood.Cheese and spinach ravioli with pan fried shrimp and scallops, peas, and alfredo.
