Add much as possible, I don't forecast milestones/ end points on a schedule.

I can plan the whole job, but not accurately estimate the time. It will be there tomorrow.

Had I finished brushing out the ash for an hour while tired, we could do the wood in the rain today.

Instead, we'll go to another project, 5 minutes from my shop, and work on a trail touchup and burning invasive holly and blackberries. I'll do something on my own tomorrow. Thursday, that tree will be waiting for us.

I give people a rough day that we will arrive, mostly, then confirm when appropriate.

If someone wants to schedule a specific day, that's added to the bid.
 
I can’t see how that’s the client’s problem.
If he finishes early and catches an earlier ferry will he give them money off?

I can’t speak for @27RMT0N of course, just speculating.
If there is an add on and the last boat is missed that means getting a room and not going home at the end of the day.
Partly written in jest but it’s a reality. Most locals here will understand the pains of the ferry system
 
Add-ons need to be priced accordingly. That's all. An unexpected night away from home and plans is a special charge.
If you price a job, and through no fault of the client’s, you did not manage to finish, I’d struggle to see how he/she should pay the extra.

There appears to be a small misunderstanding. I beleive that by add-ons, they mean additional work added on after the bid acceptance and scheduling has taken place. If it were part of the original bid, I would agree with you 100%
