oyster mushrooms

Harvested some big ones today off the base of a dead beech, with plenty more flushes in the works.. anyone have a good recipe?

I was just going to saute and make an omelet or sauce..

I definitley want to get into IDing wild edible mushrooms... We see them all the time.. might as well start eating them!
