Turkey Croquets
Rev: 211224 1715

Croquets:
190 g Turkey – cooked; net wt (10 oz)
30 g Celery – minced
22 g Onion – minced
10 g Jalapeno – minced
Black pepper
Accent (MSG)
Garlic powder
1 egg
¼ c Panko
Fry: 350°F for 5 min.; Drain 2 min.

Dipping Sauce:
Mayo
Horseradish
Coleman’s English Mustard (HOT ! )
Sriracha (hot)

Pork Tenderloin Jerky:
8 lb Pork
Marinade for 48 - 72 hrs:
Tamari
Black pepper
Red pepper flakes
Garlic powder
Accent (MSG)
Chipotle powder
Dehydrate: 130°F Convection for 5 hrs

this is a thread I've only read occasionally. This evening I skipped through a few pages here and there.

There were references to Cornish game hens for special times. They bring back fun memories!

My high school buddy and I would get a couple when we'd go camping. We felt so sophisticated cooking them over the campfire. My folks then adopted them into their camping menus but used the range or oven in their campers.

When I was in HS I bagged groceries at a large store. There were ten registers and on some Saturdays they were all going with a lineup. Us bag jockeys were such cut-ups, to the annoyance of the cashiers. Sometimes we had routines as dumb as The Three Stooges. One of the guys would hold up a Cornish game hen like a prize and give a shout saying, 'Hey, look, a shrunken turkey!' The customers would crack up, cashiers rolled their eyes and us baggers would howl! If anyone had one roll down the belt we'd hold it up, give Billy Jack a shout and he'd make the grand announcement. LOL...such fun...and great eating.

In a few weeks I'llbe getting together with my family for our postponed Holidays of ChristmasNewYearsBirthday mashup dinners. Cornish game hens are on the menu. @Walter Hollenbach shared a recipe for a date/cherry/orange fruit cake that sounds divine!

Thx...food for me is pretty basic and practical. Not much fancy cooking here.
@Tom Dunlap I had a 2 man-company put new siding on my house this summer.
The "helper" joked that the owner only ate hot dogs !
He would occasionally change the brand of mustard.
For a "treat" he would eat a bratwurst ! ;)

They did a really good job !

I have learned over the years cooking for myself that you can put together some “fancy” meals just using some simple and common ingredients and some good old fashioned...
