Guacamole w/ Tomatillo, Goat Cheese & Cilantro

1 Avocado, coarse mash
4 T Tomatillo salsa
3/4 oz Goat cheese, crumbled (22 g)
1 T Cilantro, fine chop ( 2 g)
1/2 t Lime juice
1/8 t Salt

It's much greener than the picture shows. Something a little different. Very tasty !

I might try adding some small crispy bacon bits next time.

Enchilada sauce, corn tortilla then layer of beef/refried bean, sauce, cubes of monterey, anothe layer as above plus cheesy mex rice, another layer as the last plus blk olives and heavy with cheez rice plus nice layer of red pepprs and old chedr and montery, oh there is an addition of sweetcorn in the first layer
Topped with cilantro, peppers, jalapeño, sourcream, habanero sauce. Only thing I would change is add a healthy crumble of chorizo to the top layer. Corn tortilla is what really made it for me.

My wife makes that! Well, very similar... she calls it enchilada casserole. Lots of corn tortilla layers, cheeses... we always use some extra sharp cheddar and pepperjack, but always look for other cheeses in the Hy Vee deli to add. It's the bomb.

I'm going to take a stab at it this week... I have a few ideas to make it even better, that I'd like to try.

1 t Extra Corning Spices
1 T Black pepper
2 T Butter

Sous Vide: 140°F for 72 hrs

Served with:
Russet potato cubes - w/ butter (steamed - 10 min)
Napa cabbage - w/ bacon crumble & butter (steamed - 5 min)

Sauerkraut - Vlasic brand - (squeezed dry in cheese cloth)
Mild sour dough bread - homemade

Grill in butter w/ Top Weight Press

Condiments:
Coleman's English mustard - (hot)
Horseradish - Heluva-Good brand
Caesar dressing - (Next Time add to the condiments !)
