Food Thread

Smoked some ribs today on our Green Egg.
Two and a half hours at 225 - 250 degrees.
Turned out great!
Looks great! Funny story, I have four racks of ribs in the smoker right in front of me at the moment. I smoked a pound of bacon earlier, fried it up and made baked beans. They are still cooking in the house. If you turn your head sideways you can see them.

St. Patrick's Day dinner tonight, because I do a big meal every Sunday for some friends and neighbors. Corned beef with Colcannon and some rather generic mixed vegetables.

Dessert was a chocolate stout cake made with Guinness, covered in Bailey's Irish cream buttercream icing. Dessert was served with Irish coffee as well. Figured I would live out the Irish side of the family for a day.

Pizza – Cubed Steak & Corn
Rev: 260404 0930

Boboli thin crust (docked to prevent bubbles) – prebaked 350°F for 10 min.
Sliced extra sharp cheddar – baked to melt into crust surface. – 350F for 10 min.
Garlic marinara sauce (Rao’s brand)
Red onion slices
Left-over chicken fried steak – small cubes (eye-of-round, tenderized w/ mechanical cuber)
Corn kernels – cooked
Sliced Havarti cheese - topping
Bake 350°F on baking steel for 10 min.

Easter Dinner: Baked a 15 pound Hickory Smoked Ham with a glaze (I cheated, and bought a jar...), Pineapple Stuffing, Green Bean Casserole, Mashed Sweet Potatoes, Deviled Eggs, and Sticky Buns with Pecans. All homemade except the ham glaze.

Finally, I get to eat a little. I've sent the to-go boxes to the houses where they go, so I am finally sitting down by myself to eat a bit of what's left.

That ham could be used as a poster or commercial! It’s beautiful.

Thank you! It did turn out really nice, I was impressed too. I did something a little different, wrapped it in foil for most of the baking time, then unwrapped it for half an hour before I put the glaze on. It worked even better than I expected, I'll have to do it that way again next time!
