Spaghetti Squash w/ Marinara sauce

Spaghetti squash, whole - steam in deep, covered pan for ~30-40 min.
- cool to touch in water bath; cut in half; remove seeds; scrape lengthwise w/ fork to remove strands
Note: - I slightly over-cooked the squash, so the strands are short.

Marinara Sauce:
Red Onion - Large size; coarse chopped
Olive oil
Sauté onions to translucent

Tomato sauce - Newman's Own Fire Roasted tomato & garlic sauce
Black pepper - coarse grind
Thyme
Rosemary
Marjoram
Crushed red pepper flakes
Japones chiles - dried, ground to powder (hot !)
Combine onions, tomato sauce & spices - cook to meld.

Top with:
Pepperoni - Margarita brand (very good brand) - sliced into discs
Parmesan - crumbled

Black pepper - fresh ground
Fleur de Sel salt
Lemon juice - drizzle
Olive oil - drizzle

Note: The meat is much pinker than the pics show.

Roma tomato - sauteed in brown butter, pepper, accent seasoning
Mashed potato - butter, chix broth, crumbled Parmesan, shredded cheddar, pepper, salt

And why does every place give you 3 tiny tortillas? You give me mountains of expensive food but skimp on the cheap tortilla? Madness. And quit hiring the white teenage girls for waitresses, they're screwing up your joint. Honey, when I request a triple order of tortillas (I'm on to your hijinks Mexican restaurant consortium...) that means bring it to the table with my entree. Dude who barely speaks English gets my order right each time Daphne so get off your phone and get my damn tortillas. And I'll just ask for my check now to plant that idea in your vapid head.

Rant over. Yummy as usual though.

Salmon Bowls

Seasoned salmon with salt, pepper, and cumin. Then marinated in salsa with orange juice and chopped apple. Grilled.

Served over cilantro rice with a touch of soy, tossed with grilled bell peppers and served with avacado slices
 
Lamb shanks braised w/ butter, salt, pepper (sous vide 144°F for 48 hrs)
Au Jus for dipping
Potatoes w/ onions fried in bacon fat
Corn (whole kernel) w/ butter & Pecorino-Romano

Grilled / Pressed Lamb & Cheddar Sandwich:

Lamb shank – braised & shredded (Sous vide 144°F for 48 hrs) [left-overs]
Cheddar – extra sharp
Bread – homemade, mild, sour dough
Butter
