Tree Arthritus?

I have been noticing over some time I come across some trees of all species but mostly hard woods. That grow in an unusaul way, all of a sudden the branch will stop its normal path of growth and take a sharp 90 degree turn. I was in an Oak and it was so bad I couldn't Possibly make a cut that we would be able to run through our chipper(I like to be nice to the groundie) And the chipper I run Is a Morbark 2400 xl The biggest in the company. I have never gotten a straight answer to my questions on why. At first I thought it was from aggresive pruning, but there normally arn't any scars or calasing. Does anybody know what causes this?

I've seen branches that were bent when another limb broke and laid on the first one. When the broken limb is taken away the first has taken on the memory.
 
Next time I see one I will get a picture. But this is more like all the branches not just one or two. I normally dont know the job site I am going to till that morning so I cant plan to bring the camera.
