Can I cut the sewn ends of a spliced eye through the middle and take it out or do you need to completely cut the end of the rope where the eye is?

Don't cut the splices at all. You would cut the cord some length down from one of the spliced eyes such that when you tie a poachers knot in the cut end, your new "eye'n'eye" is the appropriate length to tie the friction hitch you want. One eye of your hitch cord will be spliced, the other will be tied.

You can do this twice since you have two good splices to use.
