Guilty Pleasures

Love me some chicharrones... the wife can't believe I eat them. She's always going on about what they're made out of. You know, she'll throw a pig's butt in the crockpot, but doesn't... well, you know how this conversation goes if you eat meat. I'm just saying... if you're going to eat that pig, then eat the fuggin' pig. Any part that is vaguely edible. Except chitlins. That shit tastes exactly like what it is... what the pig shits through. I tried it once, back in 1973 in Biloxi, Mississippi. Never again.

But chicharrones are tasty and crunchy.
 
Chicharrones is a sacred food and should be homemade and fresh to be fully appreciated. I know an elderly Spaniard man who lives in the mountains outside of Taos NM who makes the best Chicharrones I have personally ever eaten. I believe he rubbed his pork belly with backing soda before starting the multi stage, multi day cooking process. His Chicharrones, Tamales, and Christmas (red & green) Chili are a truly transcendent experience.
