Chicken fried Beef
Rev: 220516 1410

Filet mignon – sliced & pounded thin
Flour, Egg wash, Panko
Fried at 350°F for 2 min.

French fries – fried twice (300°F for 5 min.; plus 350°F for 10 min.)

Broccoli florets – steamed w/ butter

Dipping: Gravy w/ black pepper & hot sauce

That all sounds good, but I will never understand the concept of deep frying breaded beef. Especially filet, it’s just too good by itself!
 
Ribeye – Reverse cooked
Rev: 5/19/22

Ribeye
- long, slow cook at 130°F for 3 hours (rare)
- then pan fry w/ butter or 1 min. on each side

Twice baked potato:
- Butter, sour cream, asiago

Next Time:
Ribeye - 133° for 4 hours; pan fry for 1.5 min. on each side.

I’ve never heard of reverse cooking but hey I’ve been called a backwards type of guy!
Gonna have to give it a shot

Big messy build your own nacho plates here :)
My nephew is over, and he has to eat a halal diet, so we mixed a can of sweet corn with a can of refried beans. It’s delicious, the rest of the stuff he can eat, just not this beef. Nice to be able to have something on hand for the kid besides man n cheese and peanut butter and jelly lol. So, seasoned ground beef, lettuce, tomato, onion, a couple different salsas, shredded cheddar, cheddar sauce from a jar, sour cream, pickled jalapeños. A couple different corn chips, but we only wanted the Fritos. This habanero salsa is pretty intense.

All pretty messy, and needed to eat it with forks, maybe it’s more like a taco salad. Pretty dang delicious!
Got some cookies, cherry pie, and/ or ice cream for whenever the kids want dessert. I can’t even think about dessert for now.

That all looks great, especially that first plate! Makes me hungry again and I just ate not long ago.

Recently I've made several ribeye-reverse-cooked steaks. They were all relatively inexpensive.
They were a little tough.

BIG improvement today. I sous vide a ribeye w/ butter pats, at 131°F for 24 hr. Then pan fried to create crust.

This was excellent (especially for an inexpensive piece).

I am going to convert some of you guys to Sous Vide, sooner or later. ;)
 
Wagyu Beef Strip Steak – Reverse Cooked
Rev: 220527 1445

Wagyu Strip Steak
- Sous Vide w/ butter, salt, pepper at 130° for 24 hrs
- Pan fry w/ butter for 1 min. / side to crust

(Note: This was my first test to see how tender Wagyu would be.
Actually, I found no difference from just Sous Vide cooking “choice” steak.)

Corn – Steamed 20 min.

French fries – 350° for 15 min.

Au Jus – w/ added butter & lots of horseradish for dipping
