I have become very sensitive to caffeine as I have gotten older so I began a voyage to find a kick-ass decaf. It didn't take long before I realized that a majority of them were horrible and most of the decaffeination processes just sucked the life and flavor out of the beans. That was until I discovered E.A. Sugarcane decaf. One of the very best Cortado's I have ever pulled. Caffeinated or otherwise. No wonder Weihong Zhang won the 2024 US Brewers Cup Championship using sugarcane decaf, beating all the caffeinated contestants. This shit tastes like Mother Earth in a cup.

That is quite an achievement! I will have to find me some'o'dat.
 
One reason I was hesitant to quit is that I'm a believer in the health benefits of drinking coffee. I wonder if decaf gets those same benefits?
I believe all the phenols are still present in decaf so all the health benefits are also present. The sugarcane decaf removes 96-97% of the caffeine so there is still a small amount of octane in the cup...Perfect in my opinion.

Many of the top roasters are now using the E.A. sugarcane decaf beans so you can find one that really hits the flavor profile you are looking for..

Just did a pour over on the Hario Switch with the sugarcane decaf. Ground a little finer than your usual pour over grind and did a 11-1 ratio. Sweet baby treejeezus it was like a good red wine. Amazing.

Have you ever put a dash of ground Cali bay laurel nut in the coffee grinder? That shit is daum good, I highly recommend it if you have a preference for heavy body, chocolate notes, with earthy aroma.

No, but since I live among bay laurels I will have to give it a go. I do frequently put a small pinch of sea salt in my grounds. Can really elevate a cup if used judiciously.

About 1/8 of a teaspoon per single cup is just about right.

Also really loving this one. Its half decaf (a little more step in your giddy-up) but damn its good.

 
Colombians love Tinto which is a strong brew in a small cup sweetened with panela.

The best coffee I have experienced came from the highlands of Papua New Guinea, which was brought by a friend of my wife, from the supplier there. It had very low acidity.
