We don't charge customers directly for lunch or other substantial breaks...in other words, if we stop work completely for lunch then that time is not "counted" when we work on an hourly basis.
That said, though, we often pay our guys for thier lunch break either as an incentive or because, even though they are eating, that time is not thiers; they are still on call. Consequently we do try to recover those costs.
In such cases thier lunch time costs are figured into our overall pricing analysis and built into our pricing model.
So, technically, we bill for lunch.
Clear as mud I suppose....
I suspect that your crane people and the others who don't directly bill for lunch have already factored lunch into thier hourly rates.
Your bucket guy is just more direct about it in obviously counting that time in the bill.

My bucket guy raised his rates on me this spring, $15 per hour "just because I can." So that's a lot of the reason behind why I am starting to question his pricing in comparison to others.
