Shepherd’s Pie

Prep:
1 # Ground Lamb – saute; then separate meat & grease
1 T Butter

Veg: - saute to tender
1/4 Onion – diced
1 Carrot, med – diced
2 Celery, stalks – diced

Roux:
Lamb grease
1 T Butter
6 T AP Flour

Mashed:
Potato, large – boiled
1 T Butter
Shredded cheddar cheese
Water

Assemble:
6” Cast Iron Skillet, w/ Pan Spray – on wire rack
Pasty pie crust – Pillsbury; thaw 90 min.; NOT docked
½ of Lamb meat on bottom layer of pie crust.
½ of meat w/ all vegetables next layer
Cover w/ mashed potatoes & cheese

400°F Convection oven for 50 min.

New – Sausage Pizza experiment
Rev: 240410 1050

12” Burrito tortilla
Cheddar cheese – Base
Pre-bake ~ 5 min; then cool.

1 lb Bob Evans, Zesty Sausage
- Sausage rolled out between 2 sheets of parchment paper to form 11” continuous sausage disc.
Marinara sauce w/ Embasa chipotle sauce
¼ Large Onion – thin sliced
¼ lb Mushrooms – sliced
Havarti cheese – Topping

Bake 350°F for 20 min.

Cabbage Rolls – Lamb
Rev: 240424 1200

Savoy Cabbage – leaves, steamed & trimmed
- Cabbage – peel off individual leaves; steam in groups until tender (8-10 min.); trim/thin the thick stem end.

1 t Olive oil
1 lb Lamb – ground; minimal cook to render fat & evaporate water; break up into small pieces

½ Red onion – diced
2 med Carrots – diced
2 stalks Celery – diced

½ c Rice, long grain – uncooked, soaked in water 30 min.

Marinara sauce – Rao, tomato sauce w/ garlic
  • Lightly saute onion, carrot & celery in olive oil & lamb fat; just to welt; remove from heat.
  • Mix veg, lamb, & rice.
Casserole – layer bottom w/ cabbage leaves.
Add rolls & cover w/ marinara sauce.
Bake at 350°F for ~ 45 min; (20 min. uncovered; 25 min. covered)

Crawfish Pie – Greg’s Version (Experiment)
Rev: 240430 1930

Crawfish Tails, cleaned – 12 oz – Louisiana Farm Raised
(Do NOT use Chinese, or Asian crawfish; they are terrible.

Puff Pastry – because I have it.
Cast Iron skillet – 6”
PAN spray

Topping:
Mashed Potatoes for Topping – Russet, Butter, shredded Cheddar cheese, Black pepper.

1/4 Red onion – diced
  • Celery stalk – diced
  • ½ Carrot – diced
  • ¼ Russet potato – very small dice
  • 2 T Butter

  • Roux:
  • 2 T AP Flour
  • 2 T Tomato paste
  • Chix stock to thicken

  • Seasonings:
  • Black pepper
  • Red pepper flakes
  • Accent seasoning

  • Bake 400°F for 45 min.
