Food Thread

Sour cream makes them wonderful. I do a mashed potato that goes over amazingly well, I never have leftovers when I serve them somewhere. Rough ingredients list/directions:

5 pounds potatoes
8 ounces sour cream
1/2 stick butter
A good pile of Freeze dried chives
A couple good shakes of dried parsley
Salt and pepper as necessary

I beat the whole mess up well on my big stand mixer (I can do 10 pounds of potatoes at a shot if I care to)

Then at the end, add in about a cup of frozen shredded cheddar, stir in quick, and let it sit.

Garnish with chopped bacon.

The cheddar melts and leaves little cheesy pockets all throughout the potatoes, it’s basically a loaded baked potato, in mashed form.
I do very similar and add some garlic too
 
Since nobody else (@VenasNursery) posted a corned beef picture this year, I’ll take on the responsibility.

Nothing exciting, just six pounds of corned beef brisket, five pounds of white potatoes, two large cabbages, and one pound of baby carrots. Simmered the works adding things progressively across about three hours, then pulled the beef and let it rest before carving it and mixing it all together again.

Tastes good, but I need to either season the beef myself next time, or add some extra seasoning to the pot, it could have been a bit stronger for my taste.

I was so busy I didn’t get pics lol but did have it
Bought a expensive one the day after st patty’s day a “wigley’s”
I’ve heard about them but gonna try it out Friday cooking on the road in the rv on my way to Florida
I’ll definitely remember to get pics lol

Thank you, it was pretty good. Nothing special though, just whatever brand the Weis down the street sells.

Actually, I've cooked corned beef several more times since the above. Cheapest beef I've seen. Walmart; then Sous Vide at 136°F for 72 hr makes it very easy & darn tender.

I don’t know, that was a while ago to be a St. Patrick’s Day meal! I’ll give you half credit on that one.

Still though, your cooking always looks amazing, so I guess I’ll have to give you full credit on account of your food quality.
 
Actually, I was in Fermoy, Ireland in 1984 on St. Patrick's Day trying to start-up a chemical plant.
Back then the day was a very serious religious day.
Some of the employees were appalled that they had to work on the day !
However, millions $$$ had been invested; the owners were losing $ until it started; & Ireland was still a pretty poor country & needed employment.
 
Me and my wife love cooking but when on vacation we can enjoy!

1lb snow crabs
2 cold water lobsters 6 oz
3 Grilled corn on the cob
3 Baked Potato

Feeds three like no other best dinner so far on this trip
 
Pizza – thin crust
Rev: 230407 1130

Burrito tortilla – 12”; par bake
Harvarti cheese base – bake 4 min. to melt

Marinara sauce
Chipotle peppers in adobo sauce
Red onion strips
Dry salami sausage
Cheddar cheese shreds
Bake 350°F for 10 min.

The Embasa brand, chipotle peppers in adobo sauce was a very good NEW addiction.
 
Just some Costco St Louis style ribs hanging in the Weber 18" smoker. Fell off the bone when they were done - 4.5 hrs.
