More of the same ravioli ........................................... only different:

Scallop Ravioli – w/ Bacon & Shitake
Rev: 200101 1455

Scallops, cut horizontally in ½ (large 10/20, natural diver scallops)
[NO STPP - sodium tripolyphosphate]
Egg roll wrappers, cut in ½ (makes 2-3/4” square ravioli)
Dried Shitake mushrooms, re-hydrated & sliced
Note: I Used dried shitakes, re-hydrated (Dynasty brand). These retain a nice, unexpected, firmer bite vs fresh.
Bacon, thick cut, baked (350°F for 45 min.)

Steam 15 min. to cook.

Brown butter w/ minced garlic sauce.

My dinner this evening is far less exciting, a nice simple Mennonite Egg Bake. It’s what you make when someone gives you seven pounds of loose sausage and you live alone...

Sausage Egg Casserole
One pound loose sausage
One dozen eggs
One cup milk
Three cups frozen shredded potatoes
Two cups shredded cheddar cheese

Brown sausage on stovetop.

In a large bowl, Beat eggs together with milk, add in all ingredients, reserving 2/3 cup of cheese. Pour mixture into one greased 9x13 glass casserole dish, or split between two 8x8 casserole dishes. Simple and awesome. Keto friendly if you scrap the taters. Add bacon, sirloin, ham, or whatever else sounds good. Maybe some jalapeño :)

Mix some of the sausage with ground beef and make burgers. I did the same and used pretzel buns and topped with smoked gouda once.
