Swamp Cabbage

Remove the apical bud from 2 mature Sabal palmettos (Cabbage Palms) by cutting the head out of the palm from a point about the length of an ax handle beneath the newest emerging shoot. Remove fronds until the inner bud is reached. Save only the material that you can snap with your fingers, similar to snap peas. Dice up the "cabbage", rinse and set aside.

In a large pot, saute 1/2 lb. of bacon, diced fine. Once the bacon has browned, add 2 large onions diced, and saute until softened. Add 1/tsp Black Pepper and 1/2 tsp Garlic Powder.

Add 2 10.5 oz cans of stewed tomatoes and the cabbage. Add water until the cabbage is covered. Bring to a boil, and then simmer, stirring occasionally for about an hour, until the cabbage is fork tender.

Serve in bowls with crusty bread for dunking.

Note: In Florida, Sabal Palmettos are protected and can only be harvested on private property. I usually get enough removal work to make a pot of swamp cabbage whenever I get the urge. You can also find the palm heads on the palm pile at your friendly neighborhood brush site ;-)

A French Canadian delight that I am NOT suggesting you actually try. But you might want to anyway.

Poutine
Hot french fries tossed lightly with the freshest white cheese curds you can buy. Then top with brown gravy - preferably St. Huberts special poutine gravy mix.

Yes, its basically carbs fried in fat with fat tossed in and more fat poured over the top!

I don't eat it, tho I often want to.

S & S Burrito mix

1. 1 lb. ground beef. Brown and drain grease.

2. Ad approx. 1 cup Pace Picante sauce and approx. 2 tablespons of honey. Approximate because I just pour it, but it's about that much.

3. Heat on med-high and stir until most of the juice evaporates.

4. Spoon into flour tortilla and add whatever else you like (cheese, frijolles, etc.).

Makes 3-4 burritos, depending on who's eating them. The honey is a suprising compliment to the picante. Discovered it back in my cowboy'n days when I tried to make a vaquero version of sweet and sour = sweet and spicy!
 
bacon egg salad samich,

4-6 eggs hard boiled and peeled, 2-4 bacon strips fried in skillet until light brown. add eggs and bacon into food processor with one table spoon of mayo and a dash of pepper. mince in processor until chunky. spread on toast.

sweet soy stir fry,

1 lb assortment of mixed veggies, 2 table spoons of soy sauce, one table spoon of honey, one teaspoon of ginger powder or fresh ginger minced up, quarter cup chopped green onion, dash of parsley and seasame seeds.
mix soy sauce and honey into a bowl, add ginger and green onions, parsley and seasame seeds.

add veggies to a large pan and fry in 2 table spoons of peanut oil until browned. add sauce and simmer until it starts to evaporate. serve over white or brown rice.
 
thinly sliced cuts of deer meat. what ever cuts you prefer.

one large zip lock bag

one cup of soy sauce

2 table spoons of honey

salt and pepper.

combine soy sauce and honey in a cup. with a fork, whisk it up until the honey mixes with the soy sauce evenly.
pour mix into large ziplock bag. next place your cuts of meat in the ziplock and coat the meat well. refrigerate over night.

take bag out after 24 hours of being in the fridge. add salt and pepper to taste. add meat to a low heat smoker or dehydrator and cook to desired taste.
 
Bacon goes on everything! I love that stuff. I just made fresh clams over pasta with bacon today. We caught the clams from the Sound around 2pm. mmmmmmmmmmmmmmmmmmm
