Pork Belly - Stir Fry

Red onion – sliced strips
Garlic - minced
Napa cabbage shreds
Shitake mushrooms (dried, rehydrated – results in more mushroom texture)
Raman noodles - hydrated
Pork belly

Olive oil – California Olive Ranch brand (Millers blend – vy good)
Tamari – San-J brand (vy good)
Fish sauce – Red Boat brand (vy good)

Black pepper
Red pepper flakes

I have five maple logs impregnated with Shitake spore that I made a month ago. Suppose to take a year or two to produce something worthwhile, but I am looking forward to my first harvest, and they will probably end up in a similar stir fry (less the cabbage).

Forty (40) years ago a friend gave me some small logs (commercial) impregnated w/ Oyster mushrooms. They produced nicely.

It was a very nice & surprising result, how the much texture the dried & re-hydrated Shitake mushrooms changed from fresh mushrooms, even after cooking. "very toothy".
 
Does anyone knows how to make an authentic American possum pie ? LoL
Several years ago, I cooked & ate a racoon. Tasted like good dark-meat-turkey.
I tried (unsuccessfully) to find the cooking temp to counter any concerns about diseases: rabies, etc.

I think possums eat almost anything, and would therefore be even more suspect.

Wood chuck might be a better option. ;)

I see. I think if you removed its innards and cooked well then it can almost eliminates all the pathogens and diseases , parasites , etc Wood chucks are hard to come by around here. LoL and I don't think Possum meat and Racoon meat taste the same . Possums and racoons grows everywhere around here . ;)
I prefer Racoon meat over possums tho . But I'm just imagining its taste on both ... LoL ;)

I have eaten raccoon and woodchuck. Raccoon tasted like a goose to me. Dark and a bit greasy. The woodchuck was also greasy, however I don't recall if I liked it or not as it was about 50 years ago. The raccoon was about 20 years ago. I do remember trying to scrape all the fat off the woodchuck hide. That was thick. One of each was enough or I would have gone again, I'm sure. One of those things you would eat if you were really hungry, but not if there was a grocery store nearby. I would have to be damn hungry to try a possum.

When you work for full time on one job and don't get paid right. That's basically that company's BS is pushing you to eat raccoons or possums. Obviously if I have an enough money to buy groceries I would do that in a heart beat. . LoL
My friends who drives for UBER asking me to cook some . I wonder they are that hungry for food ..can you imagine ? Living in Los Angeles CA and gas no money to buy groceries or fast food ?

When I cooked my racoon, a local trapper was catching 6-8 racoons that were tearing up the back yard.
He used "have-a-heart" traps, in case something else got trapped.

He then took them to his house, skinned & dressed them. He put them in a freezer to accumulate a bunch.
Around Xmas holidays, he sold them in "inner-city" Cleveland ! ! !

Yeah , I've got 2 of those Racoons or small size animals have-a-heart traps in my storage.All dipped in dye and ready to go . The thing is raccoons are so loud after it got trapped in it. Screeches like there is no tomorrows. most of cases they gets caught in pairs and cries all night all day . It Echoes in a dark mountains & That itself brokes my heart LoL

My coons didn't screech. They just rattled the trap for a while; then they reached outside to form a grass bedding for the night.
Putting a sheet over the coons in the trap would calm them.
They seemed pretty calm when the trapper picked them up & put them in his pickup.

I see. I guess I sets my traps in sharrow bed of waters that makes them to panicking it may be. It's doesn't settled bit under shallow water. May be they thinks they are going to get all drown by the water and dies or something . That's why.
