I got the idea from a short video I came across on YouTube and tried to duplicate it.
-Soften 1 stick unsalted butter
-roast ~ 2lbs sliced marrow bones
-saute 3 chili peppers (I used green) until well blistered
-slice peppers, remove seeds, cut off stems, then dice
-add all of the above into a mixing bowl
-I zested about 1/3 of a lemon into the bowl
-Grate 1 Clove of garlic into bowl
-salt to taste
Incorporate well with a hand mixer then form into a log on parchment paper, wrap, and into the fridge.

Edit: here's the vid-

I've used it on pan seared scallops, steaks, pork chops, and fried an egg in it this morning for a breakfast sandwich.

Finally found a prime cut butcher shop locally and tried some prime cut fillets they had wagyu but was trying to on the healthier side
They turned out fantastic along with some grilled zucchini , grilled asparagus , and twice baked potatoes !

Cooked perfectly for my liking
I really must be working for the wrong company, or maybe just living in the wrong neighborhood. Is there a house on your street for sale? Maybe I’ll just move in, and show up for dinner every night.

We didn't have anything on hand for dinner and my wife started talking about pizza delivery, Uber Eats, etc. I commented that for that kind of money, I'd rather run up to the store and grab a couple of steaks.

Compound Butter – Bone Marrow & Blistered Chile
Sounded excellent, so I made a log:

Unsalted butter – 1 stick.
Beef marrow bones roasted at 425° for 15 min. (2 lb of bones)
Anaheim chili – blistered / charred over flame.

Frankly, I was disappointed by my effort.
The marrow flavor was lost by the butter flavor, and even more to the Anaheim.
The Anaheim was too much like a green bell pepper; the log needed more chili (spice) flavor.

Goat Butter – found this in a local grocery several years ago; Very Good.

Those mashed potatoes look great. You mix in sour cream when you're mashing? I'll have to try that...
Sour cream makes them wonderful. I do a mashed potato that goes over amazingly well, I never have leftovers when I serve them somewhere. Rough ingredients list/directions:

5 pounds potatoes
8 ounces sour cream
1/2 stick butter
A good pile of Freeze dried chives
A couple good shakes of dried parsley
Salt and pepper as necessary

I beat the whole mess up well on my big stand mixer (I can do 10 pounds of potatoes at a shot if I care to)

Then at the end, add in about a cup of frozen shredded cheddar, stir in quick, and let it sit.

Garnish with chopped bacon.

The cheddar melts and leaves little cheesy pockets all throughout the potatoes, it’s basically a loaded baked potato, in mashed form.
